This organic sencha was originally brought into our range as a 2008 shincha, and due to the positive feedback received from our customers we decided to add it to our sencha selection. It includes everything from the first harvest! By that, we mean the buds, leaves and stems that are all harvested together in spring are included. Our farmer in Sayama swears by making organic sencha in this manner as it produces a tea that is considerably more flavorful and balanced. The buds and leaves produce the aroma and flavor, while the stems add subtle sweetness. This is what you might call a 'no makeup' sencha, and is presented as you would find it in nature.
Sayama, which is a very well regarded tea growing region here in Japan with a long history of making quality green tea, is in Saitama prefecture which is just north of Tokyo in the Kanto region of Japan. The farmer who makes this sencha is a 15th generation farmer whose tea farm is the ONLY JAS certified organic tea farm in the whole of Saitama prefecture! We strongly advocate this tea, and believe finding a superior organic sencha at this price is highly unlikely!
